1 Onion or 1 large leek, chopped
2 cloves Garlic, thinly sliced
1 Tablespoon Oil
1 tin chopped Tomato
1 small tin Butter beans
2 Tablespoons chopped Parsley or Coriander
Half teaspoon chilli flakes, optional
Salt and Pepper, to taste
2 teaspoons EZE-Sweet
2 cups Chicken Stock
Fry onion and garlic gently, in oil, for a few minutes.
Add rest of ingredients and simmer for 20minutes.
Blitz the soup till smooth and thick.
