Apple Raisin Nut Cake


3 cups unsifted flour
2 eggs
1 cup mayonnaise
1 1/2 teaspoons cinnamon
1/4 teaspoon salt
2 cups sugar
1/3 milk
2 teaspoons baking soda
1/2 teaspoon nutmeg
1/3 teaspoon ground cloves
1 cup raisins
3 cups chopped peeled apples 1/2 cup coarsely chopped walnuts


Preheat oven to 180 degrees C or 350 degrees F.
Grease and flour two 9-inch round cake pans.
In a large mixing bowl, combine flour, eggs, mayonnaise, cinnamon, salt, sugar, milk, baking soda, nutmeg, and cloves.
Mix at low speed for two minutes, scraping bowl frequently.
Now stir in apples, raisins, and nuts. Pour into pans.
Bake for 45 minutes or until toothpick poked into the centre of cakes comes out clean.
Cool in pans for 10 minutes.
Remove from pans and cool completely.
Fill between layers and top only with 2 cups of whipped cream topping. Refrigerate.
Serve slightly chilled.
