Ingredients
– 120 ml (½ cup) butter
– 120 ml (½ cup) EZE Sweet sweetener
– 2 eggs
– 5 ml (1 teaspoon) vanilla essence
– Pinch of salt
– 180 g (1½ cups) self-raising wheat flour
Method
- Melt the butter and add it to a mixing bowl.
- Pour in the EZE Sweet sweetener and stir well.
- Mix until fully combined.
- Crack the 2 eggs into the mixture and continue mixing.
- Add the vanilla essence and mix again.
- Gradually add the self-raising wheat flour and stir until smooth.
- Add a pinch of salt and mix well.
- Cover the dough and refrigerate for 2-3 hours.
- While the dough chills, preheat the oven to 180°C.
- Once chilled, roll out the dough on a floured surface.
- Cut out shapes from the dough using a cookie cutter.
- Place the cookie shapes on a baking tray and bake for 5-10 minutes, or until golden brown.
- Remove the freshly baked cookies from the oven and let them cool before serving.
